INGREDIENTS
1 tbsp. olive oil
1 large onion
1 1/2 lb. ground beef
1 can crushed tomatoes
1 tbsp. red wine vinegar
1/2 tsp. pumpkin pie spice
1 lb. ziti
1/2 c. butter
c. all-purpose flour
5 c. lowfat milk
1/4 tsp. ground nutmeg
3 large eggs
1 c. Grated Parmesan cheese
DIRECTIONS
- Preheat oven to 375 degrees F. Heat pot of water to boiling. Spray 3-quart baking dish with cooking spray.
- In 12-inch skillet, cook oil and onion on medium-high 4 minutes. Add beef and 1/2 teaspoon each salt and pepper. Cook 5 minutes or until browned. Add tomatoes, vinegar, and pie spice. Cook 15 minutes.
- In 4-quart saucepot, melt butter on medium-high. Stir in flour until smooth. Slowly whisk in milk, nutmeg, and 3/4 teaspoon salt; simmer 8 to 10 minutes or until thickened, whisking. Cool 5 minutes. Stir in eggs and Parmesan.
- Cook ziti 2 minutes less than label directs. Drain. Into baking dish, press half of ziti. Spread meat over ziti. Layer on remaining ziti. Top with sauce. Bake 45 minutes or until top is browned and edges are bubbly.
